This recipe is probably one of the easiest
I know and it is so delicious and everyone loves it! It tastes so light and fresh but also has vibrant flavors! I guarantee that as soon as you try this one, you will give it a permanent place in your repertoire!
This is all you need!!!!! Seriously! (Well, plus one more bruschetta container)! How easy is that?? If you don't have a Trader Joe's by you, you can just use your favorite Bruschetta recipe instead! Or my other recipe from scratch, I call it "Pasta Caprese".
INGREDIENTS:
~1 Box of pasta (any type, but I prefer the Rotini because it tends to grip the sauce better than others I have tried!)
~2 containers of the Trader Joe's Bruschetta Sauce, drained (I think it needs almost two containers per 1 box of pasta!)
~8 ounces, Fresh mozzerella, cubed
~A handful of Fresh Basil, slivered (I like to roll it up and cut it with scissors)
~Salt & Pepper to taste
HOW TO:
Boil water and add some salt to flavor the pasta. Then add the pasta and cook as directed.
Cut the fresh mozzarella up into little cubes, set aside. And cut up the basil, and set aside. Drain the oil out of the bruschetta, and set aside. It is WAY too oily if you do not drain! (Don't heat the bruschetta).
As soon as you drain the pasta, add all the ingredients and serve immediately. The heat of the pasta will heat the sauce and cheese. Then add salt and pepper to taste!
*Sometimes to add a different flavor, you can just add about a Tablespoon of Balsamic Vinegar.
I like to make extra, because it is really good as a cold pasta salad for the next day lunch or dinner!

you have some great dishes on here. I love italian food. I will def. have to make this. Feel free to read my blog on clean eating. There are some meat dishes but I'm sure they can be altered to vegeitarian versions.
